I recently spoke with knifemaker Svein Opdal and wondered what was on the menu! He told me that he had made a whole bunch of knives for a local restaurant called Iris. This is not just any restaurant.
When you enjoy a dining experience at Restaurant Iris, it’s not just the delicious food and the magnificent view between fjord and mountains that impress – the details of the service also play an important role. Among these details are the unique, handmade knives created by Svein Opdal, a master of traditional craftsmanship. These knives are more than just tools punched out in a factory, they are knives inspired by local culture and tradition, created to enhance the guest’s experience.
Restaurant Iris looking for custom-made knives
Svein Opdal was originally approached by Restaurant Iris with a desire to create 12 specially designed knives, adapted to the restaurant’s unique serving style. The knives were to be used for the smoked reindeer tongue dish, a small but memorable dish in the restaurant’s 18-course tasting menu. After experimenting with different blade types, Svein landed on a solution that not only worked perfectly for the purpose, but also captured the essence of the local craftsmanship.

With handles made of stabilized beech sourced from Baroniet Rosendal, an iconic landmark in the area, the knives became a symbol of sustainability and local belonging. Svein originally produced 14 knives, but the success was so great that the restaurant ordered an additional 14 knives. This enabled Iris to give each guest a completely unique experience – guests now choose their own knife from a beautiful tray, a detail that has quickly become a topic of conversation among the restaurant’s visitors and made the knives internationally famous.

A story that extends beyond the Hardangerfjord
The popularity of Svein's knives has not only been limited to Restaurant Iris. Following his success, he has supplied knives to customers in both Norway and abroad, including London. This shows how traditional Norwegian craftsmanship can resonate on a global stage, when made with love, precision and respect for local materials.
In addition to the knives, Svein's wife, ceramist Elisa Helland-Hansen, has also contributed to the experience at Iris. The restaurant uses Elisa's ceramics in its presentation of some of the dishes, which underlines the couple's shared vision for beautiful, functional and sustainable craftsmanship.
An experience for chefs and craft enthusiasts
The collaboration with Svein has inspired the chefs at Restaurant Iris to take part in the process. Two of the chefs have visited his workshop and made their own kitchen knives, while several others have purchased knives and cheese slicers from his collection. This direct connection between craftsmanship and cooking creates a unique understanding and respect for the quality behind both the tools and the dishes served.
